What is water activity?
Water activity (Aw) measurement is most commonly used in the food
and pharmaceutical industry, where it's used to determine shelf
life and quality. The Aw of a product is measured in a closed space
at a constant temperature. Measuring water activity with equipment
of Rotronic means measuring the relative humidity of the air around
the product within a scale of 0..1. This is a measure for microbiological,
chemical and enzymatic stability of perishable products such as
food, seeds and medicines.
